A savory morning bun filled with home-made béchamel, shredded gruyere, and a mixture of roasted spring vegetables, then topped with chopped wild ramp leaves. Named for Chief Shannopin, the Lenape leader of Shannopin’s Town, a former trading post and village which was most likely located along the Allegheny River in present-day Lawrenceville in Pittsburgh.
